This butter chicken uses a nice shortcut with rotisserie chicken, a dreamy sauce, and BIG flavor! It feels indulgent but fits your macros.

Ingredients

• 12 oz rotisserie chicken

• 1 Tbsp butter chicken style seasoning

• 10.5 oz lite unsweetened coconut milk

• 10.5 oz marinara pasta sauce

Directions

  1. Remove both breasts from the rotisserie chicken (or use 12 oz cooked chicken of your choice).
  2. Cube or shred the chicken, season with the butter chicken seasoning, and set aside.
  3. In a small saucepan, heat the marinara and coconut milk to a light simmer—don’t boil, just warm it through.
  4. Add the seasoned chicken and return to a gentle simmer.
  5. Turn off the heat and let it stand for 5 minutes so all that flavor settles in.

🍚 Serving suggestion: Serve over basmati or plain white rice with a side of garlic naan for full comfort-food vibes.
