- Set oven to 375F.
- Brown beef; season with salt, pepper, and taco seasoning.
- Add one can of fat free refried beans.
- If it gets too dry, add a little bit of water.
- Cut flatbreads in half, horizontally.
- In a 10x7 casserole, pour half the taco sauce in the bottom.
- Start to assemble enchiladas with 1/3 cup of filling in each and just a sprinkle of cheese.
- Once all six are rolled up, pour remaining taco sauce on and remaining cheese.
- Cover with foil, making sure to spray foil with cooking spray so that it doesn’t stick.
- Bake for about 20 minutes; uncover and throw back under to get the cheese more melted and brown on top.
- Garnish with condiments of your choice (optional; may add BITES to your serving).
