Cheesy Beef & Bean Enchiladas

Cheesy, hearty, and full of flavor! These Beef & Bean Enchiladas are a comfort food favorite.

Ingredients

  • 1lb Ground Beef 96% Lean
  • 4 Cut Da Carb Wraps
  • 9 Sprigs of Cilantro
  • 1 Cup Fat Free Cheddar Cheese
  • 1 Medium Lime
  • 1/2 Cup Taco Sauce
  • 1 Cup Fat Free Refried Beans
  • 2 Tbsps Taco Seasoning

Directions

  1. Set oven to 375F.
  2. Brown beef; season with salt, pepper, and taco seasoning.
  3. Add one can of fat free refried beans.
  4. If it gets too dry, add a little bit of water.
  5. Cut flatbreads in half, horizontally.
  6. In a 10x7 casserole, pour half the taco sauce in the bottom.
  7. Start to assemble enchiladas with 1/3 cup of filling in each and just a sprinkle of cheese.
  8. Once all six are rolled up, pour remaining taco sauce on and remaining cheese.
  9. Cover with foil, making sure to spray foil with cooking spray so that it doesn’t stick.
  10. Bake for about 20 minutes; uncover and throw back under to get the cheese more melted and brown on top.
  11. Garnish with condiments of your choice (optional; may add BITES to your serving).

** Cream is non-fat Greek yogurt mixed with chili lime seasoning, garlic salt, lime juice, and pepper to taste.
