Broccoli Blueberry Salad with Chickpeas

An interesting but delicious combination of broccoli and blueberries that just works!

Ingredients

  • 2 Tsp Dijon
  • 1/3 Cup Cranberries
  • 1 Cup Chopped Raw Carrots
  • 4 Cups Broccoli
  • 2 Tbsp Lemon Juice
  • 1/4 Cup Sunflower Seeds
  • 1 Tsp Avocado Oil
  • 1 Tbsp Apple Cider Vinegar
  • 1 Medium Cucumber
  • 1 Tsp Poppy Seeds
  • 1 Cup Chickpeas
  • 1/4 Tsp Kosher Salt
  • 2 Cloves of Garlic
  • 1/4 Tsp Black Pepper
  • 1-1/2 Cup Blueberries
  • 1 TbspPure Maple Syrup

Directions

  1. Chop the broccoli super fine and add to a large bowl.
  2. Drain and rinse chickpeas and add to the bowl.
  3. Chop the cucumbers and add to the bowl.
  4. Shred the carrots and add to the bowl.
  5. Dice the red onions and add to the bowl.
  6. Add remaining ingredients, mix and season to taste with salt and pepper.
