Ingredients
2 Large Chicken Breasts or 4 Small
Avocado Oil Spray
Salt
Pepper
1 Tbsp Minced Garlic
2 Cups Fresh Cranberries
1 Cup Chicken Broth
4Rosemary Springs
Zest of One Small Orange
Juice of One Small Orange
2 Tbsp Balsamic Vinegar
1 Tbsp Honey
1/2 TbspHoney Mustard
Directions
Season the chicken breast with salt and pepper.
In a oven safe pan, preheat to medium heat.
Spray pan lightly with avocado oil.
Add the chicken and brown on both sides.
Once browned, set aside. (Do not cook all the way through).
In the same pan, lower heat and add the garlic.
Sauté garlic for about 20 seconds.
Add the fresh cranberries followed by the chicken broth, rosemary sprigs, orange zest, orange juice, balsamic vinegar, honey and honey mustard.
Bring to a boil and smash a few cranberries down.
Lower heat and add the chicken back in along with drippings from the plate.
Cook until chicken reached 165F internal temperature.
Place under a broiler if you are wanting a more browned chicken.
Remove rosemary and replace with fresh if desired for presentation.
