Pumpkin Apple Muffins

Ingredients

Muffin Batter

  • 1-1/4 CupFlour
  • 1/2 CupMonkfruit Sweetener
  • 1 TspDak's Spices Pumpkin Spice
  • 1/2 TspCinnamon
  • 1 TspBaking Soda
  • 1/2 TspSalt
  • 1 CupLibby's Pure Pumpkin Puree
  • 1 CupCinnamon Apples
  • 1/4 CupWater
  • 2Eggs

TOPPING

  • Spray Butter
  • 3 Tbsp Monkfruit Sweetener
  • 1/2 Tsp Pumpkin Pie Spice
  • 1 Tsp Cinnamon

Directions

  1. Preheat oven to 350 degrees.
  2. Spray cupcake/muffin pan with cooking spray.
  3. Combine all dry ingredients in a large bowl, mix and set aside.
  4. In a separate bowl combine all the wet ingredients and add wet ingredients into dry until flour is fully combined with the wet ingredients.
  5. Scoop 12 portions into the pan.
  6. Bake for 15-20 minutes or until til toothpick comes out clean.
  7. While muffins are in the oven combine the 3 TBSP Monkfruit sweetener with 1/2 tsp pumpkin pie spice and 1 tsp of cinnamon. Set aside.
  8. Once muffins are out of the oven, spray with butter and sprinkle with sugar mixture.
  9. Cool on wire wrack before removing and enjoy.
