Slow Cooker Creamy Vegetable Soup

Ingredients

  • 3.5 Cups Chopped Spinach
  • 1 Tsp Garlic Powder
  • 1 Cup Onions
  • 1 Cup Fat-Free Half & Half
  • 2 Russet Potatoes
  • 1 Cup Vegetable Broth
  • 2-2/3 Cup Frozen Mixed Vegetables
  • 1/4 Cup Lemon Juice
  • 1/2 Tsp Lemon Pepper
  • 1-1/8 Tsp Italian Seasoning
  • 2 Tsp Salt
  • 2 Tbsp Cornstarch

Directions

  1. Combine potatoes, onions, seasoning, and broth in your slow cooker and mix well.
  2. Cook on Low for seven hours or on High for three hours. Add mixed vegetables and frozen spinach. Combine half and half, cornstarch, and whisk until corn starch is dissolved.
  3. Add to the slow cooker, stir well, cover and cook for an addition hour. Add lemon juice, then serve.
