Craving the flavors of your favorite egg roll but want to keep it light? Try Chef Genie’s Chicken Egg Roll in a Bowl! Packed with protein and veggies, it’s the perfect healthy twist on a takeout classic!

Ingredients

  • 1 tbsp Olive Oil
  • 1 lb Chicken Breast
  • 1 tsp Ginger Paste
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Pepper
  • 1 bag Coleslaw Mix
  • 3 tbsp Less Sodium Soy Sauce
  • 3 tbsp Teriyaki Sauce
  • 1 tsp Hot Chili Sauce
  • 1 medium Green Onion

Directions

  1. Sauté diced chicken breast in olive oil in a skillet over high heat.
  2. Add seasonings and ginger paste. Continue cooking until the chicken is cooked through.
  3. Add coleslaw mix, soy sauce, and teriyaki sauce. Mix well and cook for one minute.
  4. Top with chili oil and green onions.
