Chickpea Pasta Tuna Salad

This tuna salad is made with chickpea pasta, so it is loaded with fiber and protein!

Serves
8 (1/2 cup serving)

Ingredients

  • 12oz Chickpea Pasta
  • 1/2 medium Red Onion
  • 1 cup Frozen Peas
  • 1 cup Light Mayo
  • 1/2 cup Sweet Relish
  • 1 tbsp Mustard
  • 6oz Tuna
  • Salt & Pepper to taste

Directions

  1. Start by cooking the noodles according to the package instructions.
  2. Chop the onion into small pieces and boil the peas for 5 minutes.
  3. In a large bowl, combine all ingredients.
  4. Chill in the fridge until cool and ready to serve.
