Take your weeknight meals up a notch with these Chimichurri Steak Bites. Juicy steak cubes and tender asparagus are paired with a vibrant, garlicky chimichurri sauce that brings flavor to every bite. Quick, simple, and perfect for meal prep or a crowd-pleasing dinner.

Ingredients

  • 1 1/2 lbs. Steak
  • 3 tbsp. Butter
  • 8 oz. Frozen asparagus
  • 2 tsp. Salt
  • 1 tsp. Garlic powder

Sauce:

  • 1/2 cup Chopped parsley
  • 4 cloves Minced garlic
  • 2 tbsp. Lemon juice
  • 1 tsp. Oregano
  • 1 Jalapeño pepper
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 1/4 cup Red wine vinegar
  • 1/4 cup Olive oil

Directions

  1. Add cubed steak, butter, frozen asparagus, salt, and garlic powder in a hot skillet.
  2. Mix chimichurri sauce. I used an immersion blender to make it smooth.
  3. Cook until steak bites are done on both sides. Just a couple minutes each side. Asparagus should be done around the same time.

This is a fast meal for days you don’t want to do much prep work. Especially if you have pre made chimichurri sauce on hand. This also freezes well for a quick freezer meal. Put uncooked steak, butter, frozen asparagus, salt and garlic powder in a freezer bag and seal.

Mix all sauce ingredients and put it in a separate bag. Thaw completely and cook according to directions.
