Comfort in a bowl! This Crockpot Chicken & Gnocchi Soup is creamy, cozy, and perfect for chilly days. With tender chicken, pillowy gnocchi, and hearty veggies, it’s a simple, one-pot meal that tastes like a hug. Just toss everything in the crockpot and let it do the work. Dinner is served!

Ingredients

  • 4 cups Chicken broth
  • 12.5 oz. Chicken breast chunk (or fresh or rotisserie chicken)
  • 2 cups Peas & carrots
  • 1 1/2 cups Condensed cream of chicken soup
  • 1/2 cups Fat free half & half
  • 2 tbsp. Corn starch
  • 3 cups Potato gnocchi
  • 1 cup Baby spinach
  • 1 tbsp. Italian seasoning
  • Salt and pepper to taste

Directions

  1. Combine broth, condensed soup, chicken, peas & carrots, Italian seasoning, and salt & pepper to the crockpot, add the lid and set to LOW for 6 hours.
  2. When cook time is finished, mix the dry cornstarch with the half & half then add the gnocchi, half & half mixture and baby spinach and recover the crockpot.
  3. Turn the temperature to HIGH and cook for another 15-20 min until gnocchi are tender.
  4. Adjust seasonings to taste.
