Ingredients

  • 1/2 cups Pickled beets
  • 1 cup Nonfat plain Greek yogurt
  • 1/4 tsp. Ground Cumin
  • 1/8 tsp. Sea salt
  • 1 tsp. Mint leaf
  • 1/2 Lemon, juiced

Directions

  1. Combine beets, yogurt, cumin and salt in a mixing bowl. Cut the beets to a smaller size if you like.
  2. Add the juice of half a lemon if you want it to be tart (optional).
  3. Refrigerate for at least 2 hours and serve chilled with shredded mint leaves as garnish.
