Ingredients
1 tbsp olive oil
1 lb chicken breast, cubed
1 medium onion, sliced
1 bell pepper, sliced
1 zucchini, sliced
1 packet Italian salad dressing mix
3 tbsp lemon juice
1 tbsp parsley
Salt and pepper to taste
Directions
Add olive oil to a large skillet with cubed chicken breast. Season with salt and pepper and cook until no longer pink.
Add sliced onion, bell pepper, and zucchini, and sauté for two minutes.
Mix in Italian dressing seasoning and lemon juice.
Simmer for three minutes, then top with parsley and serve.
