Light, fresh, and full of crunch! This lighter broccoli salad is perfect for your Memorial Day cookout—or any sunny day when you want something fresh, delicious and guilt-free.

Ingredients

Salad base:

  • 2 cups broccoli, chopped
  • 2 tbsp red onion
  • 2 tbsp sunflower kernels
  • 1 tbsp raisins
  • 1 tbsp bacon bits

Dressing :

  • 1/4 cup Nonfat Greek yogurt
  • 1/2 tbsp Swerve sugar
  • 3/4 tbsp white vinegar

Directions

1. For the dressing: mix together the yogurt, vinegar, and sugar.

2. For the salad base: Add your chopped broccoli, raisins, sunflower kernels, red onion, and bacon bits to a bowl.

3. Pour dressing over the salad and mix.
