Low-Calorie Raspberry Blondies

This is a fresh twist on a classic recipe! Chickpeas add extra nutrition while replacing flour, making these a protein-packed, low-calorie treat. Easily blended in a food processor, they’re a simple and nutritious option to enjoy anytime!

Ingredients

  • 1/4 cup of sunflower seed butter
  • 1 can of chickpeas
  • 1 teaspoon of baking powder
  • 1/3 cup of oats
  • 1/2 cup of granulated sweetener
  • 2 eggs
  • 1 cup of raspberries

Directions

  1. Preheat oven to 350 degrees. Line an 8X8 pan with parchment paper.
  2. Place chickpeas and nut butter in a food processor or blender.
  3. Add oats, baking powder, eggs, and sweetener. Blend until smooth.Add raspberries. Pulse lightly a couple times.
  4. Pour into the pan. Bake for 20 minutes.
  5. Cool and refrigerate to store.
