Pumpkin Protein Pancakes

These pancakes are easy, high-protein, naturally sweet from the pumpkin. Perfect for a protein-packed fall breakfast!

Ingredients

  • 1/4 cup Pumpkin puree
  • 1 Egg
  • 2 tbsp. Oats
  • 1/2 Scoop vanilla protein powder
  • Dash of pumpkin pie spice or cinnamon
  • 1-2 tbsp. Almond milk

Directions

  1. In a blender, combine pumpkin purée, egg, oats, protein powder, milk, and pumpkin pie spice.
  2. Once blended, heat a nonstick skillet over medium high heat, and lightly spray it with cooking spray or oil.
  3. Using a tablespoon, spoon out four small pancakes, or make one large one.
  4. Cook for 2 to 3 minutes each side or until golden and cooked through.
  5. Serve as is or add sugar-free syrup and Cool Whip if desired.
