This easy recipe has a lot of protein and comes together in a few minutes. It can be put together ahead of time, frozen, thawed, and cooked. It has a lot of flavor and makes eating healthy enjoyable.

Ingredients

  • 1 lb. Beef roast
  • 1/2 cup Soy sauce
  • 3 tbsp. Minced garlic
  • 3 tbsp. Sugar free maple syrup
  • 2 tbsp. Brown sugar alternative
  • 2 tbsp. Olive oil
  • 2 tbsp. Rice vinegar
  • 2 tbsp. Ground ginger
  • 1 tsp. Salt
  • 20 oz. Frozen broccoli

Directions

  1. Preheat oven to 425 degrees.
  2. In a bowl, add cut up beef roast, soy sauce, minced garlic, sugar free maple syrup, brown sugar alternative, olive oil, rice vinegar, ground ginger, salt, and frozen broccoli. Mix well.
  3. Use parchment paper or aluminum foil over pan and spray with oil.
  4. Dump bowl of mixed ingredients onto pan. Evenly distribute.
  5. Bake for 10-12 minutes from thawed or 20 minutes from frozen.
