Ingredients

  • 6 large eggs
  • 2 ½ tablespoons light mayo
  • 2 ½ tablespoons nonfat plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 2 tablespoons dill relish
  • 3 tablespoons chopped green onion
  • Salt and pepper, to taste

Directions

  1. Hard boil 6 eggs until done - usually 10-12 min on the stovetop or 5 min in the Instant Pot.
  2. Cool and peel eggs and place peeled eggs in a medium bowl. Smash eggs with fork, meat chopper or potato masher until desired consistency.
  3. Add remaining ingredients to the bowl and mix well.
  4. Taste and adjust seasonings as needed.  Some people like to add paprika or Old Bay seasoning.
  5. Try serving in a sandwich, open faced on some warm crispy bread, on some crackers or in a lettuce wrap.
