Spinach and Feta Scramble

Let's talk about spinach! This superfood is often underrated but packs a serious nutritional punch. My go-to? Adding it to my morning eggs for a boost of flavor and nutrients! Give this spinach and feta scramble a try for a delicious and healthy start to your day!

Ingredients

  • 2 Eggs
  • 1 Cup Baby Spinach
  • 1/4 oz Crumbled Feta Cheese
  • 1/4 Tsp EVOO

Directions

  1. Add the EVOO to the pan and turn up the heat!
  2. Add the spinach (don’t worry, it looks like a lot but it’s going to cook down)
  3. Once the spinach is cooked, add the eggs and combine well.
  4. Add salt and pepper, then top with feta cheese crumbles.
