Sweet Potato Salad

This Sweet Potato Salad is the perfect blend of sweet, savory, and satisfying! Packed with flavor, nutrients, and a deliciously light twist on a classic. Great for meal prep, picnics, or a wholesome side dish!

Serves
6 (1 cup per serving)

Ingredients

  • 2 sweet potatoes
  • 15 oz corn
  • 15 oz black beans
  • 2 bell peppers
  • 2 tsp seasoning salt
  • 1 Tbsp lime juice
  • 1 tsp cumin
  • 1/2 Tbsp garlic powder
  • 1/2 cup bacon crumbles
  • 1/2 cup Fat-free feta cheese

Directions

  1. In a large bowl, combine a can of drained black beans and a can of drained corn.1
  2. Cube sweet potatoes and cook them according to your preference. For this recipe, I boiled them, but roasting adds great flavor!
  3. Add seasonings, lime juice, feta cheese, and bacon.
  4. Chop bell peppers into small pieces and add them in.
  5. Finally, mix everything together.
