One of my all-time favorite appetizers is Spinach Artichoke Dip, but it can be quite high in calories. So, I decided to create my own 'lightened up' version!

Ingredients
3 Bell Peppers (cut in half, then cut each half into 4)
1 small container Cremini Mushrooms
4 Roma Tomatoes (cut into quarters)
2 Red Onions (cut into quarters)
1 Tbs EVOO
1 Tbs Garlic Powder
Salt & Pepper
8 Wooden Skewers
Directions
Place the cut veggies on the skewers, alternating between the veggies - you can place them in any order you’d like.
Put the EVOO on the veggies and then the spices listed above. Rub them on well!
